"This is the only kind of fish my 9-year-old daughter, Leilani, will eat. When I spearfish, I go out of my way to make sure I bag a couple of pan-size parrotfish for her. (You should see Lei's face when I don't get one!) But when I catch one this size, we all eat it. This fish was caught on a line with a special bait. They are coral eaters, but local Hawaiians know a secret bait they will take on a hook. They are probably the most beautiful fish in the sea, and when pan-fried with flour and chicken seasoning, probably the most delicious.
