Pohole
Pohole Fern Shoots (Athyrium spp) is only called Pohole on Maui, larger and more tender. The tops are slightly curled with a year round availability. On the big Island Hawaii it is called “Ho’i’o” and in the Philippines called “Pako” Japanese “Warabi”.

The crunchy texture and mild flavor similar to asparagus or okra makes perfect salad, mix tomato, onion with vinaigrette salad dressing.

Our hopes and heart has always been to help all Hawaii with an argituculture food that is plentiful. The land stays the same, grown naturally the more you pick it the more you get. Now this ancient plant is being bulldozed under for development. Marketing this food will give it value. With value we can preserve this ancient food. We will have enough for our families and make a living off what grows naturally.

Pohole is 98% water, high levels of Iron, vitamin C and beta carotene. Two ounces of the raw shoots (about a 1/2 cup) satisfy a third of the adult daily requirement for vitamin C, 15 percent iron twice as much as spinach same level of Vitamin A, small amounts of calcium and B vitamin. Fat Free and high in fiber. Pohole has a 6 day refrigerator shelf life.  

Hana Herbs & Flowers is the first farm to have an Export stamp for Pohole (Maui Fern Shoots). Native to Hawaii, Hawaiian’s have been eating this food for 100’s of years. Storing the ferns in the ground lined with rocks them lined with Ti leaves. We still use the Ti leave today to keep the ferns cool in shipping. Adapting Hawaiian traditions to the needs of the contemporary chef, we have spent more than 12 years developing an abundant, perennial crop, and now regularly supply some of Maui's finest restaurants and hotel dining rooms. These have included the Ritz-Carlton, the Four Seasons and the Hotel Hana-Maui.

While young fern shoots, (particularly those of the commonly known "fiddle-head" variety), are regarded as a great delicacy in many countries, here in Hawaii, (where their native name is "Pohole"), they have garnered a reputation for being noticeably more tender and succulent, the island's tropical climate adding both a distinctive taste and the advantage of year-round availability. Best eaten when they at the earliest stages of their development, these shoots are consumed in large quantities by both the Japanese and the Hawaiians eaten raw as a salad vegetable. Preparation is fast and easy, requiring only washing of the hairs.
